Cucumber Salad with Garlic Dill Dressing
Cucumbers make a refreshing, delicious summer salad. They are low in calories, about 95% water and contain important vitamins and minerals. This garlic dill dressing recipe is a lighter version that adds plenty of flavor and compliments the cucumbers.
Fresh cucumbers are abundant and inexpensive in late summer. If you grow your own, have friends or neighbors who grow a garden you might find yourself with buckets of cucumbers. This salad is a great way to use them up.
Cucumber Salad with Garlic Dill Dressing
It’s best to prepare the dressing in advance to give the flavors time to develop. It keeps well in the refrigerator for one to two weeks. Check the expiry dates on the yogurt and sour cream for shelf-life dates. If you prefer a thicker dressing, reduce the amount of lemon juice in the dressing. This creamy garlic dill salad dressing goes great with green, tossed salads as well.
Garlic and Dill Dressing Ingredients:
- 1 cup greek yogurt
- 3/4 cup sour cream
- 1/4 cup fresh lemon juice
- 1 packet of Watkins Organic Garlic and Dill Dip Mix
- Watkins black pepper, to taste
Garlic and Dill Dressing Directions:
Prepare the dressing by whisking all of the ingredients together in a medium bowl until thoroughly combined. Store in the refrigerator until you’re ready to use it. You’ll need 1/3 to 1/2 of this recipe for the cucumber salad. The remainder keeps well in the fridge for one to two weeks.
Cucumber Salad Ingredients:
- 2 large cucumbers, sliced and cut into half rounds
- ½ medium red onion, sliced thin
- 1 teaspoon of Watkins organic dill weed or 1 tablespoon fresh dill, finely chopped
- Garlic Dill salad dressing
Cucumber Salad Directions:
Add the cucumber, red onion, and roughly chopped fresh dill or dry dill to a large bowl. Pour one third to half of the dressing on top and toss to combine. Serve immediately or chill for several hours before serving.
