Crazy Chocolate Cake
Have you heard of a crazy chocolate cake? This has been one of my go-to recipes for years because it’s so quick and easy. What’s crazy about this recipe is that it doesn’t contain eggs, butter, or milk, which are the usual ingredients you expect in a cake. It’s the perfect cake for anyone who is allergic to eggs or dairy.
I gave this recipe to one of my dearest friends and she used it for all her cakes because her child had an egg allergy. She made the most amazing black forest cake using this cake as a base.
This is a great recipe for kids because it’s easy. Everything is mixed right in the pan and they will enjoy watching the vinegar react with the baking soda and creates a fizzy batter.
Crazy Chocolate Cake Recipe
You mix, bake, and serve this cake in the 9 X 13 pan so there are fewer dishes and clean up. Delicious with chocolate frosting, topped with whipped cream, plain or any way you like.
Ingredients:
- 3 cups all-purpose flour
- 2 cups sugar
- 6 tablespoons cocoa
- 2 teaspoons baking soda
- 2 teaspoons baking powder
- 1/2 teaspoons salt
- 1 teaspoon Watkins baking vanilla (or 2 tsp of another brand)
- 2 tablespoons vinegar
- 10 tablespoons vegetable oil
- 2 cups tepid water
Preheat the oven to 350 degrees Ferinheight. Sift dry ingredients into a 9 x 13-inch pan. Make 3 depressions in the dry ingredients. Into one, put vanilla, into the second put vinegar, and into the third the vegetable oil. Pour the water over and mix well. Bake for 30 to 40 minutes until done. Cool in pan. Frost with chocolate icing.
The batter is lumpy so don’t worry about getting it completely smooth. I find it works best to sift the dry ingredients together several times. If you don’t have a sifter use a whisk to mix them well.
Crazy or wacky cake recipe variations.
You can change the flavor of this chocolate cake with different extracts and spices.
- For chocolate orange cake, add 1 teaspoon of Watkins pure orange extract.
- For chocolate cherry cake, add 2 teaspoons of Watkins cherry extract.
- For chocolate almond cake, add 1 teaspoon Watkins pure almond extract.
- For chocolate spice cake, add 1 teaspoon of Watkins cinnamon, 1/4 teaspoon of Watkins nutmeg, and 1/4 teaspoon of Watkins cloves.
- For mocha cake, substitute tepid coffee for the water.
I don’t remember where I got this recipe, it isn’t a cake I ever remember my Mother making. I know I have had it for a very long time because it’s written on the first recipe cards I used.
