Funfetti Vanilla Mug Cake One Minute Microwave Cake
If you are craving cake this quick and easy funfetti vanilla mug cake is the best. It’s a fun, one-minute microwave cake with colorful sprinkles for confetti, topped with sweet vanilla frosting.
I don’t know who discovered you could bake a cake in a cup in the microwave but it’s kind of life-changing! If I bake a full-sized cake it’s too much for my husband and me. But a mug cake is just perfect for us to share! I’ve tried a number of mug cake recipes and this one is my favorite. The frosting is optional but I highly recommend it. Funfetti Vanilla Mug Cake Recipe
ingredients for Mug Cake:
- 2 tablespoons butter
- 2 tablespoons white sugar
- 1/4 teaspoon Watkins baking vanilla
- 1 egg yolk (save the white to use in something else)
- 1 tablespoon milk
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 tablespoon Watkins rainbow sprinkles (or Watkins rainbow nonpariels)
Directions for Mug Cake:
Cream butter, sugar, and vanilla together in a large mug or microwave-safe bowl.
Stir in egg yolk. Stir in half the flour and the baking powder. Stir in 1 tablespoon of milk.
Stir in remaining flour. Then, add sprinkles and mix.
Place in microwave and cook on high power for one minute.
Let cool for 5 minutes then enjoy plain or decorate with frosting and rainbow sprinkles.
Vanilla Frosting Ingredients:
- 1 teaspoon butter
- 1 teaspoon Watkins vanilla powder
- 1 tablespoon icing sugar
- 1/4 to 1/2 teaspoon milk
- Watkins rainbow sprinkles
Directions for Vanilla Frosting:
Cream together butter, icing sugar, and vanilla powder in a small bowl.
Mix in 1/4 teaspoon of milk to make the frosting spreading consistency.
Spread on cake, decorate with rainbow sprinkles if desired, and enjoy!
