Healthy Holiday Cranberry Apple Crisp
This cranberry apple crisp makes a lovely dessert for the holidays or anytime. I like making fruit crisps because they are an easy, healthy, delicious dessert, and snack. We often enjoy it in the evening with a cup of tea. I admit to occasionally eating a bowl of apple or fruit crisp for breakfast too.
The unique thing about this recipe is the addition of vanilla extract, it complements the flavor of the tart cranberries and makes them taste sweeter without adding extra sugar.
Cranberry Apple Crisp Recipe
Apple Cranberry Crisp Ingredients:
- 5 cups apples, peeled and thinly sliced
- 1 cup fresh cranberries
- 1 teaspoon Watkins baking vanilla
- 1/4 cup white sugar
- 1 teaspoon Watkins ground cinnamon, divided in half
- 1/2 cup quick-cooking rolled oats
- 1/2 cup brown sugar
- 1/2 cup unbleached all-purpose flour
- 1/4 cup butter
Directions:
Wash and prepare the apples and cranberries. Preheat the oven to 375 degrees Fahrenheit.
Place apple slices and fresh cranberries into a 2-quart baking dish. Sprinkle the fruit with vanilla, white sugar, and 1/2 teaspoon cinnamon and stir well to coat.
In a separate bowl, mix together oats, brown sugar, flour, and the other 1/2 teaspoon of cinnamon. Cut in the butter with a pastry blender or two knives until the mixture resembles crumbs.
Sprinkle the oats mixture evenly over top of the fruit mixture. Bake in the oven for about 30 minutes or until the fruit is tender and bubbling.
Serve warm or cold. Makes 6 generous servings.
If you want to fancy up this dessert garnish it with sugared cranberries, and serve it with a dollop of whipped cream, ice cream, or vanilla yogurt.
