Spice Cookies with Vanilla Powder
These spice cookies covered with sweet vanilla powder are a new twist to an old-time favorite cookie. Everyone will love these spiced molasses cookies. As a kid, I always liked cookies covered in powdery white icing sugar. The vanilla powder takes the flavor up a notch!
One of Watkins’ newest items is vanilla power and I was super excited to try it. So far I’ve sprinkled it on fresh berries, it’s so good with strawberries! I’ve also sprinkled it on french toast and used it to make frosting for a mug cake. I knew it would be perfect for coating cookies. Since my husband loves spice cookies here are the results. Spice Cookies with Vanilla Powder
The sweet scent of baking cookies is pure comfort. I love baking cookies because we don’t have to wait long for them to come out of the oven. You’ll find a printable version of the recipe below.
Ingredients for Spice Cookies with Vanilla Powder:
- 3/4 cup unsalted butter
- 1 cup light brown sugar, packed
- 1 large egg
- 1/8 cup molasses
- 2 cup all-purpose flour
- 2 teaspoons baking soda
- 1 teaspoon Watkins ground cinnamon
- 1 teaspoon Watkins organic ground cloves
- 1/2 teaspoon Watkins organic ground allspice
- 1/2 teaspoon Watkins organic ground ginger
- 1/4 cup Watkins vanilla powder
- 1/4 cup icing sugar
Directions for Spice Cookies with Vanilla Powder:
- Cream together the butter and brown sugar in a large mixing bowl. Add the eggs and molasses and beat until light and fluffy.
- In a separate large bowl, combine the flour, baking soda, and spices. Stir to combine. Slowly add the dry ingredients to the wet ingredients and mix on low speed until thoroughly combined.
- Cover the dough or put it in a plastic bag and place it in the refrigerator to chill for one hour or longer.
- When ready to bake, place the top oven rack in the center position and preheat the oven to 375°F.
- Remove dough from the refrigerator and form balls with a 1-inch scoop. Roll the dough in your hands to form a ball and set on a baking sheet with an inch or two inches between each cookie.
- Place baking sheets into the preheated oven and bake for 10-12 minutes, or until cookies are lightly browned and cooked through. Remove from oven and let cookies cool for several minutes.
- Mix the vanilla powder and icing sugar together in a bowl or zip-top bag. Place a few of the cooled cookies into the vanilla sugar mixture. Turn or roll the cookies until they are thoroughly coated with vanilla powder.
- Serve immediately or store in an airtight container until ready to serve.
Prep time: 20 minutes. Baking time: 10-12 minutes. Chill time: 1 hour.
Yields about 2 dozen cookies
Tip: My favorite tool is a cookie scoop. Using a scoop makes it easy to make the cookies the same size so they bake evenly.
