Chocolate Rice Pudding
A nice creamy chocolate, yes chocolate rice pudding made with rice or almond milk. This recipe is vegan, gluten free and doesn’t contain refined sugar. Makes a nice dessert or healthy snack.
Ingredients
- 1 cup brown rice
- 1 ½ cups water
- Dash of salt
- 2 cups rice or almond milk
- 1 teaspoon Watkins Vanilla
- 2 tablespoons honey up to 1/4 cup or to taste
- 1/2 cup Watkins Chocolate Dessert mix
- ¼ cup almonds, slivered
Directions
- Place water, rice and a dash of salt in a heavy pot, bring to a boil. Cover tightly and cook on low for about 45 minutes or until all the water has been absorbed. Remove from heat, add milk, Vanilla and honey.
- Stir in dessert mix and bring back to a boil, stir constantly. Reduce heat, gently simmer while stirring to prevent sticking and cook until thickened.
- Pour into a serving bowl or individual dessert dishes and garnish with slivered almonds. Store in refrigerator until ready to eat.
- Serve warm or cold.
